This Special Issue of the Italian Journal of Food Science collects the presentations given at the “VI SIAL. 6th Simposio Internacional Agroalimentario” organized by the Food Engineering Department (Departamento de Ingeniería de Alimentos) of the Córdoba University (Universidad de Córdoba), held at Montería, Córdoba, Colombia on October 9-11, 2019. These papers were reviewed by the Scientific Committee of VI SIAL before their presentation, but they did not undergo the conventional reviewing system of the Italian Journal of Food Science.
