INVESTIGATION ON 'FREISA' RED GRAPE VARIETY: PHYSICO-CHEMICAL PROPERTIES OF GRAPES FROM FIVE PIEDMONT GROWING AREAS AND OF THE PRODUCED WINES
AbstractThe aim of this study was to investigate the oenological potential of ‘‘Freisa’’ grapes (Vitis vinifera L.). Grapes from five growing locations at three ripeness degrees were analyzed. Wines were also produced with grapes from each growing location. Results showed that “Freisa” grapes have relatively hard skins (Fsk>0.8 N), medium anthocyanin content (TAsk>800 mg/kg grapes), and high flavanol content (PROsk>2500 and FVAsk>1200 mg/kg grapes). Skin stiffness and thickness, total anthocyanin and flavanol contents were significantly influenced by environmental conditions and ripeness, while skin hardness was mainly related to the variety. Wine color characteristics and phenolic composition depended on growing location.
