Recovery of food waste from school canteens to mitigate environmental impact

The aim of this work was to monitor the surplus food donated to the Social Cooperative Babele by school and company canteens and a supermarket in Corciano (PG, Italy) in two subsequent time intervals (i.e., the trimester of May-July and the month of December, 2014). The food was obtained classified according to the traditional Italian meal structure. In December, 2014, Babele operated for 15 days and distributed about 409 kg of foodstuffs to 15 family units made up of 48 components. All meals consisted of carbohydrate-rich foods (52.6% of the overall mass), protein-rich ones (21.2%), raw or cooked vegetables (16.3%) and fresh seasonal fruit (9.9%), the corresponding average per-capita energy uptake being equal to 717 kcal d-1. On a year-basis, the surplus food rescued programme examined here prevented about 7 Mg of foodstuffs from being dumped in the trash and resulted in a net savings in greenhouse gas (GHG) emissions of the order of 18 Mg CO2e, this offsets the GHG emitted by an average gasoline-powered passenger vehicle when driving 2.24 times along the Earth circumference at the equator.

Setting a maximum level of lead in honey. Retrospective evaluation of lead contamination from 2005 to date in Northeastern Italy and future outlook

Lead is a naturally occurring element but largely originated from anthropogenic activities. Food is the major source of exposure to lead for humans, and the publication of a scientific opinion from the European Food Safety Authority (EFSA) on the risks to human health related to the presence of lead in foodstuffs, led the European Union to establish more restrictive limits for this contaminant in food from 1st January 2016. In particular, a maximum level of 0.10 mg/kg was established for honey. The retrospective evaluation of 918 honeys analyzed in our laboratory since 2005 revealed a progressive reduction in the concentration of lead, with a mean value of 0.045 mg/kg in 2015. 1.5% of honeys analyzed in 2015 exceeds the maximum level in lead, and therefore will no longer be marketable. The beekeepers involved should clarify the causes of honey contamination and adopt corrective actions to keep their honey production within the legal levels of lead.
