5 The application of the Ozone in oenology. State of the art and perspectives
This article describes the main applications of the ozone in oenology, on the basis of both technical and scientific literature available, that the author’s experiences. After a brief description of the apparatus for ozone generation, and its action as an antiseptic agent, the paper discusses the experiences carried out by different authors in the sanitization of oenological vats, made of wood and/or steel. For each of these they are synthesized the methods of use of the ozone and the results obtained. At following, some applications of the ozone are described for the microbiological control of grapes during drying and corks. Finally, we take in to account researches performed in order to extend the use of the ozone to the sustainable protection of grape vine.
